Description
Crispy Homemade Egg Rolls made with ground chicken or beef, cabbage, and carrots wrapped in a golden, crunchy shell. These easy egg rolls are a family favorite—perfect for snacking, sharing, or serving as a fun appetizer. Dip them in sweet chili sauce and watch them disappear!
Ingredients
For the Filling:

1 lb ground chicken or beef

2 cups shredded cabbage

1 medium carrot, shredded

2 green onions, finely chopped

2 cloves garlic, minced

1 tablespoon soy sauce

1 teaspoon sesame oil

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/2 teaspoon black pepper
For the Egg Rolls:

12 egg roll wrappers
-
1 egg, beaten (for sealing)

Vegetable oil, for frying
Instructions
- In a large skillet over medium heat, cook ground chicken or beef until browned and fully cooked.
- Add cabbage, carrot, green onions, and garlic. Stir and cook for 3–4 minutes until vegetables are softened.
- Mix in soy sauce, sesame oil, ground ginger, salt, and pepper. Cook for 2 more minutes. Remove from heat and let the filling cool slightly.
- Place an egg roll wrapper on a clean surface with a corner facing you. Spoon about 2 tablespoons of filling onto the bottom third.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly. Brush the top corner with beaten egg to seal.
- Repeat with remaining wrappers and filling.
- Heat 2 inches of vegetable oil in a deep pan to 350°F (175°C).
- Fry egg rolls in small batches for 2–3 minutes per side, until golden brown and crispy.
- Drain on paper towels. Serve warm with your favorite dipping sauce.

You can swap chicken or beef with ground turkey or tofu for a lighter or vegetarian version.

Coleslaw mix works great in place of shredded cabbage for a shortcut.

To bake instead of fry: Brush egg rolls with oil and bake at 400°F (200°C) for 20–25 minutes, flipping once.
