Description

Creamy, cozy Parmesan Pasta Soup made with garlic, onion, ditalini pasta, and melted Parmesan cheese. A fast and flexible comfort soup ready in just 30 minutes.


Ingredients

2 tablespoons olive oil

1 small onion, finely diced

2 garlic cloves, minced

6 cups vegetable or chicken broth

1 ½ cups small pasta (ditalini or elbow macaroni)

¾ cup grated Parmesan cheese (plus more for serving)

½ cup heavy cream or whole milk (optional)

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)


Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 4–5 minutes until translucent. Stir in garlic and cook for 30 seconds.

2. Pour in broth and bring to a boil.

3. Add pasta and cook for 7–8 minutes until al dente, stirring occasionally.

4. Reduce heat to low. Stir in Parmesan and cream (if using). Stir continuously until cheese melts and soup is creamy.

5. Season with salt and pepper to taste.

6. Ladle into bowls. Garnish with extra Parmesan and parsley. Serve hot.

Notes

To make it heartier, add cooked chicken or sausage.

Use dairy-free milk and nutritional yeast for a vegan version.

Refrigerate leftovers up to 3 days. Keep pasta and broth separate if storing.
