Description
This easy soft zeppole recipe creates light, fluffy Italian donuts in under 30 minutes. Perfectly golden and dusted with powdered sugar, they’re a comforting treat for any occasion.
Ingredients
1 cup water
1/2 cup butter
1 tbsp granulated sugar
1/4 tsp salt
1 cup all-purpose flour
4 large eggs
1 tsp vanilla extract
Powdered sugar for dusting
Vegetable oil for frying
Instructions
1. In a medium saucepan, bring water, butter, sugar, and salt to a boil.
2. Reduce heat and stir in flour all at once, mixing until the dough pulls away from the sides.
3. Let dough cool for 5–10 minutes. Beat in eggs one at a time until smooth.
4. Add vanilla and mix until the dough is glossy and slightly sticky.
5. Heat oil to 350°F in a deep pan.
6. Drop spoonfuls of dough into hot oil, frying 3–4 minutes until golden.
7. Drain on paper towels and dust with powdered sugar. Serve warm.
Notes
Be sure the dough cools slightly before adding eggs to prevent scrambling.
Use a thermometer to maintain oil temperature at 350°F.
Best served warm but can be reheated in the oven at 350°F for 5–7 minutes.
