Description

These golden, crispy Zucchini Fritters are packed with fresh dill, tangy feta, and tender shredded zucchini.   • 3 cups grated zucchini (about 3 medium zucchinis)

  • Salt, for draining zucchini

  • 2 green onions or shallots, halved lengthwise and thinly sliced

  • 2 eggs

  • 1 garlic clove, minced

  • ½ cup crumbled feta cheese

  • 1 tablespoon fresh dill, finely chopped

  • ½ cup wholemeal or all-purpose flour (plus more if needed)

  • ½ teaspoon baking powder

  • Salt and pepper, to taste

  • Olive oil, for pan-frying (about 2–3 tablespoons)


Instructions

  • Grate the zucchini and place in a colander. Sprinkle with salt and let drain in the sink for 30–60 minutes.

  • Squeeze out as much liquid as possible using your hands or a clean kitchen towel.

  • In a large bowl, mix the drained zucchini with eggs, green onions, garlic, feta, dill, salt, and pepper.

  • Sprinkle flour and baking powder evenly over the mixture, then gently stir to combine. Add a little more flour if the batter feels too wet.

  • Heat olive oil in a large nonstick skillet over medium heat.

  • Scoop a tablespoon of batter into the pan, flattening gently with a spatula. Cook 3–4 fritters at a time for 3–4 minutes per side, or until golden and crisp.

  • Transfer to a paper towel–lined plate. Repeat with remaining batter.

  • Serve warm with yogurt, tzatziki, or lemon wedges.

Notes

  • You don’t need to remove every drop of moisture from the zucchini, but the drier it is, the crispier your fritters will be.

  • If your batter seems too wet or won’t hold its shape, sprinkle in a little more flour until it thickens.

  • Cook in batches and avoid overcrowding the pan to maintain an even, golden crust.

  • These fritters freeze well and reheat beautifully in the oven!
